Santorini wine is produced from the exquisite white native variety of Assyrtiko carefully selected from the traditional vineyard of the island. This vineyard is considered to be the oldest in Greece, it has never been affected by the Phylloxera disease, and the grapes are grown on original stock. The result is the most distinctive, dry white wine, characterized by a bright yellow – white colour. On the nose delicate aromas of fruit – pear, lemon and pineapple – are present. On the palate, the wine is smooth, rich, fruity and full-bodied. It has a balanced acidity and along aftertaste. It is best served chilled at 45-50oF. An ideal accompaniment to seafood, white meat and light cheese.

Nykteri is the traditional white wine of Santorini, which is produced from extra matured Assyrtiko grapes. Its designation comes from its traditional wine-making, as in the past the harvest took place during the day and the stomping of the grapes during the night. It is characterized by high alcohol (more than 14%), remaining sugars and long aging in oak barrels. Its colour is gold and its nose of pear and jasmine. It is full-bodied and it can be aged for at least 7-8 years. Perfectly paired with grilled and white meat, grilled squid, intense spicy flavors and fatty fish. Best served at 12-14oC.

Gavalas Xelonoo Red

A dry red wine, the result of a skillful blending of Mavrotragano, Voudomato and Athiri grape varieties. These rare varieties cover only 3-5% of the vineyard of Santorini and in the local dialect are called «Xenoloo», hence the name of this outstanding quality wine. The harvest begins in early August so that the grapes are picked before they are fully ripe. The first fermentation is carried out in stainless steel vats at a temperature of 22oC and is followed by the malolactic fermentation. The wine matures in french oak barrels for a period of 12 months prior to bottling. Gavalas’ Xenoloo is a wine characterized by its vivid personality, velvety taste and a rich nutty bouquet. It is an ideal accompaniment to game, meat with red sauces, light spicymeals and cheese. The production is strictly limited.

Gavalas VinSanto

Vinsanto is the mythical nectar of Santorini, produced from the native grape varieties of Assyrtiko, Athiri and Aidani. The harvest starts in the middle of August. When the grapes reach the desired degree of maturation (14 – 15 Be) they are carefully picked and are sun-dried on terraces for approximately 10 – 15 days. The vinification is carried out using traditional techniques such us stopping on the grapes and use of indigenous wild microflora without any addition of selected yeasts. No sugar added. Fruity, with a strong taste of raisins, figs, prunes, honey and dried nuts. Mouth full, velvety, with balanced sweetness and fresh acidity. Vinsanto is usually served a little bit cold (4 – 6 ° C), after dinner or as aperitif. You can enjoy it by its self or you can pair it with dark chocolate or a selection of cheeses.

Gavalas and with belief in traditional winemaking methods but having at the same time as an ally the modern know-how, Gavalas winery invites you to enjoy the white wine PDO Santorini «Natural ferment». The grapes are harvested in early to middle August, screened and then vinified in stainless steel tanks under controlled conditions but following the traditional methodology of winemaking. The result of the combination of the explosive indigenous variety Assyrtiko and the capacity of the natural yeasts are exhibited by this wine which is characterized by its fruity character and consists a worthy representative of the capabilities of Santorini’s products. Aromas of pear and white flowers, mouth full, greasy, with fresh acidity and pleasant metallic aftertaste. An ideal accompaniment to seafood, fish, pasta, white meats with light sauces and cheeses. Best Served at 8-12oC.

Gavalas Voudomato Dry Rose

The grapes are harvested in early to mid-August, followed by short time extraction and then vinified in stainless steel tanks under controlled conditions. Wine «Voudomato» is characterized by fruity character, with aromas of fresh cherry and pomegranate. Soft in the mouth, metallic taste and refreshing acidity with delicate pleasant tannins that integrate the rich body and structure of the wine. Accompanies a big variety of food (seafood, fish, pasta, white meat and meat with tomato sauce).

This exquisite wine is the result of George Gavalas’ love and devotion to wine-making and his continuous effort to revive the rare, indigenous grape varieties of Santorini. It is a blend of 85% Katsano and 15% Gaidouria, both grape varieties little known outside the island, as they only cover 1% of the total vineyard. The harvest commences in early August so that the grapes may be collected before they are fully ripe. Gavalas’ Katsano is a dry white wine possessing green highlights and a nose of sweet aromas of flowers, honey and lemon blossom. On the palate it develops a rich taste with an exceptional balance, pleasant acidity and a long after taste. It accompanies superbly all seafood and white meat dishes with light sauces.
